Not trying to be a smart ass, but why would you want to do it? Taking a perfectly reliable 4 stroke and replacing it with a 2 stroke that will need the top end rebuilt every few hundred hours? And unless you are a skilled 2 stroke rider, the 250r engine will most likely be too peaky for fun trail riding.
Anyway, yes, I am sure it could be done, depending on how good a welder and fabricator you are.

Will probably take a lot of rearranging.
